In Thunderbird, when you start a new message with control N, your
cursor is placed in the address field after the to box. When you
start typing the first address, Thunderbird tries to match your
existing contacts to what you have typed. By going up and down
arrow, you can select the address you want by hitting enter on it. As

and you can start typing another address again. If you want to
change the to box to cc or bc, just shift tab and up and down arrow
