touch screens are quite easy to use. when the screen reader whether its talkback for android or voiceover for iPhone is turned on, when you put your finger or the pen on the screen talkback will read what is under your finger. there are different gestures you use to quickly move around apps and screens such as swiping in different directions, single and double taps and so on. for example if I want to scroll on my tablet I put two fingers on the bottom of the screen and slide them up to near the top of the screen. I know I am scrolling up or down by the ascending or descending tone sound that talkback makes. Some apps like my xfinity tv app really rely on the touch screen. but with other apps like web browsers I can mostly use my tablet's physical keyboard on the RCA galileo pro tablet. as for keyboards, I'm so used to where the keys are on the touch screen I can usually put my finger right on the letter I want, lift my finger off the screen and the letter is inserted into the edit box. with practice, touch screens are easy. you may need someone to show you how they work at first maybe spend a few hours with you getting you used to it. I had a friend who was frustrated with touch screens. I spent about an hour or so showing him. Now he really loves his android phones!
