You might want to put it under a heavy glass. But then you'll have a very pleasant time getting rid of reflections.
An alternative maybe putting something rigid (like cardboard or metal) behind a single page and keep it vertical (perpendicular to the book). You can make two or three shots of single pages and then properly join them with a photo-editor. No easy solution, I'm afraid.
