http://wiki.openstreetmap.org/index.php/Component_overview is helpful. (The main editors are JOSM [Java] and Potlatch [Flash]; the main renderers are Mapnik [C++] and Osmarender [XSLT/SVG]. There are also significant MySQL and Apache extensions.
