Anything that is in the data backend specified in the mapnik XML config file. That would be columns in the PostGIS DB (for OSM data), or data in the shapefiles (for the world boundaries). You can either run osm2pgsql with different parameters, or replace the world boundaries shapefiles with your own, or some other solution.
