It should be fairly easy to do. Select the way that you want to edit, insert nodes where you want to start and stop, and split the way at each node. That will leave you with the way between your two nodes. You can then edit that way as you see suitable. In Potlatch shift-click to insert a new point, and press 'x' to split. In JOSM, if memory serves, click the way and then click to insert a point. Hit Escape to end the new way that you've started, which will just leave the node.
