If you post exactly which region you are interested in, then someone might make an Osmarender SVG for you. There is also http://www.flosm.de/ai/index.html but this doesn't cover Italy at the moment. Another option is using the (commercial, expensive) "Avenza Mapublisher" plugin for Illustrator which allows you to work from Shape Files. Gives you a lot of flexibility but you'll have to do the basic map drawing first.
