Maps4Mac ( http://code.google.com/p/maps4mac ) is an on demand offline map 
browser for MacOS 10.6. It allows you browse and search maps, load gpx file 
overlays, track your position, and generate gps logs.

It uses Mapnik as the rendering engine, and in addition to osm data you can use 
it to display any Mapnik XML file.

The map data is stored in a standard database format (either PostGIS or 
SpatiaLite), so you can access and manipulate the data with standard tools in 
addition to rendering it.

Developing this has really made me see how limited a view of OSM data the 
slippymap provides, people map a lot of useful information that you don't see 
unless you download the XML. While the current Maps4Mac rendered tag set is the 
same as osm2pgsql imports for the slippymap you can still find things that 
don't otherwise render by searching (e.g. the slipplymap doesn't show very many 
values for shop=*).
