I have a similar experience running the C5 with the latest version of
talks: the apostrophe is not spoken. However, the dash is spoken in my
case. When I press the long star, it cycles through speaking all
punctuation marks including the apostrophe.

Ok this is all very interesting now. I did do long press of the * key
and I did get ther punctuation and could read through all of it. However
I found that when I am in a text message and press * another window
opens. If I arrow down the 2nd option I have is motacons. There is an
option for more emoticons but I cannot read what these are. Anyone know
if Talks will read this. I have tried with punctuation off but no good.

What do you have your punctuation level set to? This is Talks followed
by a press of 4. Are the same symbols not spoken when you do a long
press of star and arrow throu the different symbols? Also when you press
1 to get the full stop, what happens when you give a short press of the
star. Does it then cycle between the different punctuation characters?
Are they spoken then? Just trying to see if this is for all cases and
may depend on the punctuation level in Talks as far as how you have it
set.
