Polyurethane finishes are not suitable for dancing. They scratch, wear and can not be readily maintained. They can be cleaned, but you can't remove scratches and swirls.
Standard floor wax is suitable for dancing and easy to maintain, using a product like Johnson Snapback. It needs more frequent treatment than polyurethane, but it will not scratch and always looks great with regular maintenance. A commercial janitor supplier would be able to advise you.
