Hi Jesse. One thing I would love to have is a draggable sortable list
that works within a form(i.e. something like this:
http://wiki.script.aculo.us/scriptaculous/show/SortableListsDemo). I
initially looked into doing this and had all sorts of rewind problems
(for obvious reasons). Of course, I don't really know much about ajax
stuff so it might be easy to do if one had the requisite knowledge and time.

I'm currently debating between a search/detail-view capable/dynamic sort of
table view OR client side validation enhancements built on top of what paul
has added that do a lot of fancy and whimsical ajax things on the page to
make the experience a little more intuitive and friendly for the user. (This
may prove to be more annoying than friendly, don't know yet..)
