JIRA
By far the best bug tracking software I've used on any platform. Does
everything I need, does not get in the way.
I haven't used a whole heck of a lot of other systems -- bugzilla and trac
(a bit), plus a handful of in-house systems at various companies.
However, I've been using JIRA for about a year now, and love it. I was
turned on to it by its use with Apache projects and Cayenne initially, so
I guess their free licenses for OSS projects worked out ;-)
So, in order to add something new to the mix, I want to add that Atlassian
has awesome support. We were using an HSQLDB backend for a bit, and it
managed to get corrupted twice. The Atlassian guys fixed the DB for us
both times and got us back up and running very quickly (the first time was
within 12 hours, the second time, 48).
If you haven't yet, I'd also give their Confluence product a look. Not
completely related, but we've found it indispensable.
