I tried bundling a newer Universal-compiled version of Dot with Taverna before, but that was back when using a newer Graphviz broke the diagram, so I abandoned it.
It will probably work now that we fixed this problem that affected Linux users with a 'modern' graphviz. One little trick is that you would need to also copy the shared libraries to the right place inside Taverna.app. I can refresh my memory on how to do so..
