I'm doing something simiar with Thunderbird. I use PowerArchiver with a backup script to backup the Thunderbird directories (Program and data) to a USB drive then use a batch file with the powerarchiver commandline to delete the old data off the computer and unparck what I had just backed up from another computer. Works quite well.
