I just had this experience yesterday and realize that it stems from some legacy behaviour with message list column setups. In the old system, you could set up all the possible view modes exactly as you like it and then switch back and forth between them. In order to do this switching to a new sorting method would let you first start off with the default and then you build from there. I agree that the approach deserves a change with the new view modes system. I may wish to leave the column setups the same for a viewmode and yet change the sorting method.
