I think you're right. Sticking to principle avoids confusion.

I'm pretty sure that they decided to implement the current behaviour
for the same reasons as combining the From name with the reply-to
address when replying to messages.

IOW's, it seems nice to see that the message is from Jasper Jones (JJ
Lafty Institute of E-mail Research), especially when the Organisation
information is there.

However, we are now seeing examples where it may not work out so well
and avoid confusion, just as similar features do. The From name
<Reply-to) address combination for replies leads to confusion when
using address auto-completion (a potentially disastrous side-effect).

So I'm fully with you on it. Keep it simple and predictable.
