You should create Outgoing filters for this. And you may want to
consider 'Group filter' like the one I include below. as soon as someone
is added to address book and included in a group, the filter will act on
mail sent to him/her and even create the folder if it doesn't exist yet.

You can say that Incoming filters act on Inbox and Outgoing filters act
on messages that will otherwise be placed in Sent Mail folder.

You can do as I suggest above. And also, if you create separate filters
for each contact, you can always select Sent Mail folder in your folder
tree, right click on it, select 'Re-filter' and then pick the type of
filters you want to use to refilter the Sent Mail folder. I have done
this not too long ago, when I created 'Group filters' for Incoming,
Outgoing, Read and Replied.
