The only way I can think of doing this is using a recursive template to count the number of entries in the To, CC or BCC fields. However, this won't work if you use the Mass Mailing feature as Gerd suggested, plus it may give inaccurate results if some people are listed multiple times. Your best bet may be to use some sort of external counting program to generate a text file with the info so you can use %PUT in your template. I don't know how you handle Subscription/Unsubscription requests, so I can't suggest simple filters to automate the task at this time.
