I now see that there's a window that governs the folder arrangement, and it at least shows me that I must have hit 'name' while rushing around and unconsciously clicking okay to get rid of the window.... Never knew it existed! I'd love to have an explanation of how all the choices might affect my setup before randomly trying each one though.
