You can create a new tab, Today or whatever, from Workspace/FolderTabs/New favourite set. However, when creating a new tab, your only options are to select which folder(s) to display and/or which addresses from the address history. As I assume that what you want is to display messages received and sent Today, my suggestions would be to create a Virtual Folder, maybe a Common one, looking at all folders in the account(s), and filtering, like Stuart suggests, for Age less than 1 day.
