There  is  a  consistency: every line containing a "quoting" character
(the ">" symbol) will be colored red.

AFAIK  there is no option concerning this. It's only when you yourself
reply to a message (check Account|Properties|Templates|Reply) that you
can influence whether the original message is quoted or not.
