put %TO="" %TO="[EMAIL PROTECTED]" into the folder-template.
That'll do exactly what you want...
The first %TO="" will clear the original contents of the field, while
the second one sets the new contents... (if you'd use only 1, it's
value would be added to the existing %to-contents)
