I'm not sure I understgand you right, but let me give you an example:
A friend of mine is called Sven. His email address has nothing to do
with his name. So in his reply template, I have set
%Quotestyle="Sven", and whenever I reply to him, the lines quoted are
prefixed by "Sven> " (without the quotation marks).
Is this what you mean?
