You have two choices here.

1)  You can enable auto-format under Editor options. This will open up
a  whole  new  can-of-worms  with  regard to The Bat's definition of a
"paragraph", requiring a blank line to delimit paragraphs and wreaking
havoc  on your text should you accidentally run text into quoted text.
Having  said  that  -  I use it all the time and toggle it on/off when
it's getting in the way with the Ctrl-Shift-F hot-key.

2)  Use  Alt-J  /  Alt-L  to  rewrap  the  text manually when you have
completed your additions.

Z> Second,  can  I  get  e-mail  addresses  to resolve to those int he
Z> address   book   ?  So  if  I  start  typing  Ada  that  Adam  Best
Z> <[EMAIL PROTECTED]> will pop up, a la OL2K.

Yes: Ctrl-NumPad-Plus will cycle through matching entries for "ada".
