I try.

If i understand you right, you want to colour code your messages based
upon the sender (or whatever). For that you first define the colour
groups you need, then create filters in the sorting office.

There you need the actions tab, look for the colour group option and
check it, choose your colour group. Set the filter active and
automatic.

This should take of the colours for your messages. If you now want to
filter them into folders, you have to check "Continue with other
filters" and create them. Be sure to put the colouring filters above
the "foldering" one's.
