 Did I understand you correctly:

 The TO: field need to read:
 "Wilson,  Dave  I  (alias)" <[EMAIL PROTECTED]> (department)

 This can be done by making an address book template.
 You can make an address book entry for yourself.
 While making the entry you can make a New message template
 (by clicking the appropiate header)or you can make one later by right
 clicking the entry and select New message.

 Let the template contain the following line:
 %TO="" %TO=""Wilson,  Dave  I  (alias)" <[EMAIL PROTECTED]>(department)"

 This will remove any other addresses in the To- field (%TO="") and
 make the address what ever you want (%TO=".....")
 
 Make this a favourite so you can send mail to yourself by just pressing
 the small downarrow by the new message icon.
