Actually, what you can do is click the TO or CC field (i.e. put the focus there) and then click the right-most button (looks like the address book icon, sort of, but it's small). There's the drop down list button, a right arrow (for adding an address to the address book) and then the Address Book button. If you click this, it shows you the contents of the field as a easily navigable list, that you can modify. This also provides convenient access to your address books.
