This can be achieved by doing the following:

a) enable the 'leave messages on the server' option for the account.

b) create a filter that will delete all messages from the server
except the meeting request message. This can be done by using a
filter string that is unique to the meeting request messages and
selecting 'no' for the presence option. For this filter, be sure to
place it at the top of the filter rules list and to enable the
option 'continue processing with other filters'.

Note that the messages that match the filter, i.e., all messages
except for your meeting requests will be deleted from the server at
the next POP check.
