Two ways:
1) Empty the Reply-To header at account properties, that way all your
   messages go out without a reply-to header
   (account -> properties -> general -> reply-to info)
2) Empty the reply-to header at the folder properties, that way all
   messages from that folder (whether they use a folder template or
   not) go without reply-to
   (folder -> properties -> identities -> reply-to info)

BTW The second options overrides the first one, so when you don't use
a reply-to for the account (since they're unnecessary in normal use)
you can still use them for certain folders.
