Have you tried creating a shortcut via the Edit Shortcuts dialog?

Hmmm. Upon fiddling with v1.62r, I see what you mean. You can navigate
to that option using the keyboard and the current beta's, but that's no
solution for you.

With a good macro tool like PowerPro, you could create a macro based on
mouse movements since the Preferences window is always opens in the same
position on the screen.

All this of course, doesn't take away my strong agreement with your view
that a change of viewer so that you can read with variable vs fixed
width fonts should be made an easily accessible option, preferably a
toggle switch.
