It's possible.

Create a filter
Action: Export to file
        Select an existing file or type a name
        Use as template this line: %Subject
        Export format: text
        Check 'Append to existing file'
        
Now it depends on your wishes what kind of filter you'll have to use.
Is it a filter that has to be run once only, than make it a manual
filter and use re-filter folder.
In case the file needs to be updated whenever new messages are
filtered into the folder, then add this function to the existing
filter.
Do you want the file to be updated when you've read the messages, use
a read filter.
