Yahoo puts it in. I don't have a hotmail account but mails I got from
hotmail accounts have a received header with the ip in it. I don't think
this has anything to do with web versus smtp at all. You just use
different protocols to send your mail to the server (http or smtp). I
bet you can find smtp servers that don't put the ip in. But most servers
seem to do (which is good).
