Yes.
  Options -> Preferences -> Messages -> Message headers -> Add
  View as:  Charset
  RFC name: Content-Type
  Check "Display....."

Now add it to the headers you want to see
  View -> Message headers -> Charset
This action is only possible after telling TB thast it's a legitimate
header and that's what you're doing at Options -> Preferences...
