We have had this discussion at least once before on TBUDL--a long time ago--and my memory of this point is that, while you can do that, when you then put the message in another folder, the time-stamp changes. I don't have any concerns about this. But it was something that people were arguing about in the old discussion. Changing a message seems to be a real issue--of legal and other importance--for some TB! users. I think digital signing is the answer, for messages that have a possibility of later being disputed, where the dispute might matter to the parties involved.
