Add the header in Options | Preferences | Messages | Message Headers. Pick
a display name (for example "Classification") and the header name as it
will appear in a message ("X-Text-Classification"). Leave the three
checkboxes unchecked.
You can then filter in the sorting office for "Header
'X-Text-Classification' contains 'spam'"
