Have never used colors, but can say that filtering in IMAP is very
similar to filtering for POP. When mail is sitting in the inbox
unread, it will apply incoming filters as soon as that folder is
opened. I'm not currently using any read mail filters but don't see
how they would even know whether they were operating on IMAP or POP
mail.

The problem with filtering incoming mail locally for IMAP is that you
only filter mail when operating at that location and need to create
same filters everywhere or wait until that client filters.
