It can be found in Options/Preferences/Messages/Color Groups & Fonts. See attached screenshot. I don't really see this as being your problem though, as it should not matter if your background is pink or white the colors should still show up. In the screenshot you will notice a lot of tabs, normal, unread, normal selected, unread selected, etc. You may not have this due to the version you have, but you should have the Normal and Unread selections.
