That's no problem, that's intended behaviour. When you're replying to
a message, the reply is supposed to go to the address mentioned in the
reply-to header and for our list that reply-to header is set to the
list.
This is all in compliance with RFC2822.
TB has a reply-to-sender function (Ctrl-F4), but in the default
standard toolbar it has no button for that function.

Templates set in the address book are only triggered when you're
addressing your message to the matching address. So the above means
that when you set templates in the AB they won't get used when you're
using a regular reply on a list message.

When you want to send your message to the list, but you want to use
specific quick templates for replies to certain people you can use a
field in your AB in combination with a %QInclude:
Set the name of the intended QT in the Pager field of the business
tab and call that QT with %QInclude(%ABOFromBusPager="NoQT").
This is calling a QT with the name mentioned in the Pager field of the
Original; From address, but when that field is empty or the AB entry
doesn't exist it's calling a QT called 'NoQT'. You create a QT with
the handle NoQT with some general comments and use personalised QTs
for specific contacts, like a very humble QT to be called when
replying to moderators.
The %QInclude(%ABOFromBusPager="NoQT") is supposed to be either in the
AB template for this list or when you don't use a specific list
template you can put it in your account or folder reply template.
