You don't need to change your from address for that, merely adapting
the Reply-To: header is enough, though using the proper from address
will prevent confusion.

I presume you didn't set the replyto address for those folders, can be
done on the same identity tab. There's no real need to set the replyto
to be the same as the from address, after all the from address will be
used when there's no replyto.
However when the replyto fpor the account is set and the replyto for
the folder isn't set then the replyto of the account could be used.
(I'm not absolutely sure about that.)

Check the replyto in the account properties (ad delete it.) If that
isn't set you've got the replyto set in a template,

Depends on your wishes. For a limited number of known contacts the
address book can be preferred, but with a large number of varying
contacts a folder template has its advantages.
