Go to Options -> Preferences -> Profile Layout. Scroll the sample down to its signature area. Highlight the sig lines. Then open the color combo box and pick your favorite color from the list. I chose fuchsia, which is more readable than the default silver yet still light enough to emphasize that it will be cut from a reply. As for the reason it's so light, that's just developers' choice of colors -- no significant reason of which I'm aware!
