Ethereal is "graphical", currently, only because it has a graphical user
interface; it doesn't yet have any code to draw graphs.
Another packet analyzer with a GUI is KSnuffle:

It does include some graphical - in the sense of drawing pictures - code.
Another program capable of drawing graphs of TCP behavior is tcptrace:
