Have you tried work by Vicki Smith? She has both articles and books that use qualitiative methods in orgainzations.

I'm devising a qualitative research project for students in Research Methods in which they will explore a workplace to identify the cultural categories participants use for activities and tasks: its social structure and social networks. As pairs or groups they will do two or more observations and two or more interviews and will compile the data. I'm getting major support from an anthropology colleague in designing this project. In other projects, I have had students include a "review of the literature" section in their papers, but I have provided the literature for them. For this one, I would love to locate one or more articles that deal with workplaces using ethnographic methods. My students will not do a full ethnography but they could use such an article as a source of examples of observations or of ideas for analysis. I have a few articles from which I can draw portions but if you have something that you can recommend, I'd appreciate it and would summarize and return your responses to the list.
