The Odum Institute at UNC-CH maintains a database of public opinion polls. They 
have old Harris polls and well as several others. See 
http://www2.irss.unc.edu/data_archive/pollsearch.html for the search menu. I 
believe you can still download data as well as get online marginal reports. 
http://pollingreport.com/ has lots of recent surveys on various topics, so you 
may find something useful there. Finally Gallup has published a multivolume 
series that tracks various questions they've asked over the years. 

In terms of research on values, you might check out Wayne E. Baker's America's 
Crisis of Values : Reality and Perception (Princeton University Press, 2004, 
ISBN: 0691117942) should cover some of this. Another recent book on the 
"culture wars" is Morris P. Fiorina, Samuel J. Abrams, Jeremy C. Pope's Culture 
War? The Myth of a Polarized America (Longman 2004 ISBN: 032127640X). You might 
run author searches for these folks in whatever citation databases are 
available to you.
