The different versions are different sizes.  Go to the sources folder on the 
DVD on a machine that has a DVD drive and look how big the two .wim files are.  
Those files are what are going to end up on a flash stick.  Among others.  4GB 
would definitely be big enough, but you might be able to get by with 2GB.

Make a flash drive that installs Win7 with WinPE would be one option.
Standing up WDS might be quicker than that though if you have a 2K3R2 or higher 
server handy.
