I don't know if this will help you, Dan. I use the MS Ribbon mapping
guide to find where MS moved stuff to.  It works great as long as you
know where the function was located in 2003.  It is in Excel format.
You use the tabs to find the file menus or toolbars that were in 2003
and it tells you how to do it in 2007.

 They have guides for most of the programs in the Office suite.
