The user uses Outlook 2007 to connect to Exchange 2003.

What is the best way to set up i...@domain.org so that the user can
see it in their Outlook session and reply back with it looking like it's from 
info@ not u...@?

I think an alias would deliver the mail into user@ mailbox but then the reply 
would
look like it was from user@ not i...@.

Or, I'd have to set up a POP3 or IMAP account and have the user 
select the reply from user from the drop down?
