We want the Epson there for the student's to use, just not as the default. So
to change the laser to be the default instead of last used, that'd be within
system preferences->printers?

1) Set the laser as "default" on the student computers. Usually the mac is set
up as "last used" printer. Change that in preferences to the laser being
"default."

2) Remove the Epson inkjet from the student computer choices? They can't print
to it if they can't see it.

Being a Windows guy, I know there's no easy one click way to make sure a
printer will be the default printer for any user that logs into a machine. A
VB Script can do it, and that's kind of it.

What about on a Mac? I have a 14 station mac lab with an Epson inkjet printer
shared from the teacher's Mac to all the student stations. The student
stations also each have a direct IP connection to a b/w laser printer.

Any tips for making sure the laser is the default for the students when they
log in?
