Should post to the Zimbra forums and get more 'sanctioned' solutions, however 
off the top of my head...

Backup all of zimbra first before you try anything.

The way I would approach this would be to go to the mailbox store, and search 
for the raw email files (usually under /opt/zimbra/store/).  There you *should* 
be able to mangle the files to change CN=user/O=domain to user@domain.  Of 
course it will be easier to write a script that goes through and modifies the 
files for you.

The thing I see to worry about is the metadata stored in the mailbox db.  It's 
an index for fast display of the content and shows where the files are stored 
on the filesystem.  I see there is a "size" field, so I'm not sure if Zimbra 
will do any kind of validation between the raw content and what's in the DB.

If just changing the raw files messes things up the other thing to try, would 
be to migrate all of the domino data except mail, then use imapsync to bring 
over the email.
