Guys, Thanks a ton for all the suggestions. I've looked into Linode and Digital Ocean and some others. I'll probably end up at Digital Ocean to start the process of setting up postfix/dovecot and spam protection, and then move my mail domain over.
I also looked into google apps, and some other mail centric setups, but I don't like them because of the cost/per-user and lack of flexibility. Doing this all myself, getting the SPF and DKIM records setup, and making sure that my remote IMAPs clients can both send and receive email from my domain is the important part for me. I've got more comments to give in my further replies as I get some time later on.
