I don't see the benefit of having a partition table.  Why not just mke2fs
the whole lun?  Then, there's no need to edit a partition table to resize.
You simply resize2fs, and it grows to the size of the lun.

Obviously, this suggestion is no benefit here and now ... since you've
already got a partition table ... only a retrospect comment.
